Deliciously addictive Pineapple upside down cake Ricks Melt in your mouth pineapple upside down cake recipe. 1 box yellow cake mix (any brand) 1 can crushed pineapple 1 can pineapple rings 1 jar cherries 2 cups brown sugar 2 eggs 1 stick butter Preheat oven to 350 degrees. melt stick of butter in sauce pan, add brown sugar and stir until moistened, spread on bottom of cake pan. Mix cake mix according to recipe on box except substitute 1/2 - 2/3 cups of pineapple juice strained from pineapple cans for each cup of water. fold in two eggs. add 1/2 can of crushed pineapple to cake mix and stir throughly. put other 1/2 of crushed pineapple into bottom of cake pan mix with brown sugar syrup from above and spread evenly on pan bottom. place pineapple rings on top of brown sugar mixture. Place a cherry in each pineapple ring. Pour cake mix over pineapples. Bake at 350 degrees for about 35-45 minutes or until toothpick in center of cake comes out dry. Cool slightly, place plate over cake pan and turn entire thing over to release cake and topping, remove cake pan and cool 15 - 20 minutes and Enjoy!
